Schezwan Fried rice

When you think of Indo Chinese, first thing that comes to mind is Fried rice. A spicy fried rice made with Red chilli sauce and veggies is on the menu today in Veggibites kitchen. If you haven't already guessed, it's none other than Schezwan fried rice. The spicy red chilli sauce is called Scezwan sauce. Spicy and Rice, what not to like about it;-). 

The Schezwan sauce can be used to make fried rice, noodles or you can coat roasted veggies or use as a dip. You can spread it on Dosa too.  It has many possibilities. You can make the sauce in advance and refrigerate for a week or so. And when you crave for fried rice, you can make it in a jiffy. 

To make the sauce you can use any red chillies that you normally use in cooking or You can use Kashmiri red chillies for good color. 

To make fried rice I used regular Sona masoori rice that I use for everyday cooking. It goes well with the recipe. You can use any other rice but the grains should be separate and rice shouldn't be mushy.

I love to use Egg in my fried rice but you can skip it if you want to.

Ingredients (I use US standard measuring; 1cup=8oz=250ml):
For Sauce
  • 20 Red chillies
  • 2 tbsp finely chopped garlic
  • 2 tsp finely chopped Ginger
  • 2 tsp Soy Sauce
  • 3 tbsp Vinegar
  • 1 tbsp tomato Ketchup
  • 3/4 th tbsp salt or adjust
  • 4 Tbsp Sesame Oil/Other
  • 1/4 tsp Pepper powder
For Fried Rice
  • 1.5 cup Rice
  • 1/4 cup chopped carrots
  • 1/4 cup Peas
  • 1/4 cup Carrots
  • 1/4 cup Green onions
  • 1/4 cup chopped Bel pepper 
  • 2 Eggs optionally
  • Salt to taste
  • 1/4 cup Schezwan sauce from above


Schezwan Fried rice Step wise Recipe

  1. Soak 20 Red chillies in hot water. Leave for 30 minutes.The chillies will soften.
  2. Now grind chillies with enough water to a puree. You can use the soaked water for this.
  3. Chop Ginger,Garlic finely.
  4. Take 4 tbsp Oil in a pan. You can use sesame oil if you have. I have used vegetable oil. 
  5. Add chopped ginger and garlic. Cook for few minutes. It removes raw smell.
  6. Add chilli puree. Boil it. 
  7. Add salt,Ketchup, Pepper powder,Soy sauce and Vinegar to the puree. If you don't have ketchup on hand add 2 tsp sugar.
  8. Cook till Sauce thickens. 
  9. Store the Sauce in refrigerator for later use. Or you can use right away. It is enough to make about 3 cups(Raw rice)  of fried rice.
  10. Rinse 1.5 cup Rice and cook with 3 cups water, in a rice cooker.
  11. While Rice cooking, Add 1-2 tbsp oil in a deep pan. Add finely chopped carrots. Cook for couple minutes.
  12. Add Peas,Corn and beans. Cook for few minutes till they soften.
  13. Keep veggies aside and add eggs to pan. Scramble them. 

  14. Once eggs are scrambled, stir in veggies.
  15. Add salt to taste. 
  16. Add 1/4 cup Schezwan sauce.
  17. Add bel pepper now. Stir. Bel pepper tastes good half cooked.
  18. Add cooked Rice.Stir well to coat Rice with Sauce.
  19. Add salt as needed. Keep in mind Sauce has salt already.
  20. Taste the rice and add more sauce if needed.
  21. Cook for few minutes and turn off stove.
  22. Add green onions. Stir and Serve hot.
