Easy Vegetable Lasagna

Layers of cheesy goodness paired with hearty veggies is how I describe Lasagna.It’s one of my family’s favorite recipe. I have used Barilla Oven-Ready Lasagne noodles to cut down 1 step which makes it even faster. If you use regular noodles, boil them before and follow the recipe. The Lasagna was so delicious I ended up making it two nights in a row.

Ingredients
(I use US standard measuring; 1cup=8oz=250ml):
  • Barilla Oven-Ready Lasagne  -6 noodles
  • 1/2 lb Tomato sauce (I used Prego Traditional sauce)
  • 1/2 lb frozen Spinach or fresh
  • 1 small Zucchini 
  • 1/2 onion
  • 2 Garlic cloves
  • 1.5 Cups shredded Mozarella cheese 
  • 1.5 cups Riccotta cheese (Bought 15OZ) 
  • 1/2 Cup shredded Parmesan cheese  
  • 1/2 tsp Pepper 
  • Iodized Sea Salt



Easy Vegetable Lasagna Recipe

  • Preheat oven to 350F

Veggies layer: 
  1. Chop Onion into small cubes.
  2. In a Pan take 1 tbsp olive oil, add crushed garlic, chopped Onions. 
  3. Sauté till onions are transparent.
  4. Cut Zucchini into quarts, chop thinly. Add Zucchini pieces to pan.Cook till transparent. 
  5. Add thawed Spinach. Cook. you can also use fresh chopped spinach.
  6. Add Salt and Crushed black Pepper. Cook till Spinach is done.
  7. Keep this aside. 
  8. You can add more veggies if you like. 

Cheese layer:

  1. In a mixing bowl, add 1.5 cups shredded Mozzarella cheese, 1.5 cups Ricotta cheese, 1/4 cup Parmesan cheese, 1 Egg. Mix well. 

Stack the Layers:

  1. In a baking dish pour half sauce first.
  2. Place 3 noodles, they can overlap lil bit. You can break noodles to fit the baking dish. No need to boil noodles first. If you are not using oven ready noodles, boil em according to instructions on packet and stack em in a layer..
  3. Now spread half veggie mixture on top of noodles.
  4. Spread half cheese mixture on top of veggie layer.

  5. Repeat again.
  6. Finally top it with rest of Parmesan cheese. 
  7. If you prefer, stack another layer of noodles for more chunky lasagna.Repeat layers.

  8. Cover dish with foil and bake for 40 minutes.
  9. Remove foil and bake for 10 more minutes to make the top layer browned. 
  10. Remove from oven. Serve hot with Garlic bread or Salad. 
Tips:
You can skip Egg if you prefer.
