Ingredients(I use US standard measuring; 1cup=8oz=250ml):
Dry roast
- 1 tbsp Coriander seeds (Dhaniya)
- 1 tbsp Cumin seeds(Jeera)
- 2 tbsp Sesame seeds (Til)
To sauté:
- 1 tsp oil
- 6 cups greens (tightly packed)
- 3-4 green chillies or adjust
- Salt to taste
- 1/4 tsp turmeric
- 1 tsp tamarind paste
- 1 tbsp oil
- 1tsp Mustard seeds
- 1tsp Cumin seeds
- 2 red chillies
- 2 cloves garlic optionally
- In a pan, dry roast the spices mentioned above. Cool them and grind to smooth powder.I have used Lodge Cast Iron Skillet to make this recipe. It's perfect for sautéing, stir fry, deep fry. It's my everyday pan. I used a different cast iron pan to showcase/ serve ;-).
- In same pan add tsp oil, add green chillies, fry few seconds. Add greens, 1/4 tsp turmeric powder .Sauté till leaves are cooked. Add tamarind paste/extract.
- Cool them, add salt and grind along above masala powder.
- I used my Ninja Blender for both dry and wet grinding. I made a powder of dry spices first. Then added the sautéed greens to it and made a paste. I used the smoothie jar that came along the blender. I use this jar for my everyday uses like, grinding masalas, chutneys, milkshakes, smoothies etc.
- Take Chutney in serving bowl. Mix well.
- Now in the pan, add tbsp oil. When it’s hot, add seasonings (Mustard seeds,Cumin seeds, red chillies, Crushed Garlic cloves optionally) and let em splutter. Add to Chutney. Seasoning is optional but adds punch of flavor so I always season my Chutneys.
- Serve Chutney with Rice, Roti or Bhakri. Serve after half hr so Chutney soaks up flavors and tastes even better.
Tips:
- You can use red chillies instead green chillies. In that case roast red chillies along with spices and grind.
- Add chopped onions on top or serve on side with Chutney.
- Adjust Tamarind according to your taste.
- You can make the same recipe with any of the above greens by themselves.
