I have a jar of Almond Butter sitting in my fridge for a long time. Since my kids aren’t fans of it, I wanted to sneak it into something they like n get rid of it. So here is a cookie recipe that I tried. These cookies were addictive with almond goodness. They were crispy on top n soft inside, just the way I like. And the cookies were gone so fast before I click all pics :-).

Ingredients:
1/2 cup Almond Butter
1/2 cup unbleached Flour
1/2 cup sugar
1 large Egg
1/2 tsp baking soda
1/2 cup Semi-Sweet Chocolate Chips
- Pre heat oven to 350F.
- In a mixing bowl, beat Almond butter and sugar with a Hand Mixer till mixed well.
- Add rest of the ingredients except chocolate chips to the bowl
- Beat till the dough mixed well.
- Stir in 1/2 Cup Chocolate chips with a spatula.
- Scoop a tbsp of mixture onto Parchment Paper lined Baking pan. Pat the dough lightly so it stays put and not separated.
- Bake for 9-10 minutes
- I like my cookies lil soft. If you want crispy, bake couple more minutes.
- Remove the pan from oven and let em cool on baking sheet.
- Enjoy with a cup of Milk or Tea.
Tips:
You can add chopped nuts to the recipe instead chocolate chips.
If the dough is not binding together, you can add lil more Almond butter.
