Tri color Belpepper curry

I was driving my son to Preschool in the morning. He loves to watch Videos in the car, even during the 10 minute drive. So I turned on the DVD and started driving. Then came the complaint from back seat, Mumma can you change the DVD. I told him I can't since I'm driving. He was not happy. So I turned off DVD and started playing his favorite game in an attempt to divert him. The game was,  I would name 3 objects and he needs to pick 2 which goes together. Long game short, I asked him Traffic light goes with Green or blue. He picked green. 

Why the story you might ask. When I came back home and prepping for lunch I found the 3 Peppers (Green,Orange,red)  in the fridge and I almost was tempted to name this curry as Traffic lights Sabji :-) :-) . Now the story is done let's get into the cooking business .

Belpeppers are rich in Antioxidants, B Vitamin and high amount of carotenoids (good for eyes). And it's a simple recipe that goes well with Rice and Roti. Enough reasons to try this sabji :-).

Ingredients:
  • 3 Bel peppers -1 green,1Orange,1Red or any color
  • 2 tbsp oil or adjust
  • 1/2 tspMustard seeds
  • 1/2 tsp Cumin seeds
  • few Curry leaves
  • 1/2 onion
  • 1 tbsp Ginger garlic paste
  • Salt to taste
  • 1/4 tsp Turmeric Powder
  • 1tbsp Chili Powder or adjust
  • 3 tbsp Peanut powder 

Belpepper curry recipe


  1. Chop Belpeppers into small cubes. I remove the seeds.
  2. Roast 1/4 cup Peanuts and grind them into powder. I always have Peanut powder ready on hand which I use as side for Idly/Dosa/Rice. I used same powder here.
  3. In a pan, heat 2 tbsp oil, add mustard seeds, cumin seeds, curry leaves. Once splutter, add chopped onions, ginger garlic paste. Cook till onions turn color. I stopped using nonstick cookware and switched to cast ironStainless steel completely. I do my everyday cooking in these. These are better utensils for cooking.
  4. Add chopped belpepper pieces. Sauce till peppers are softened. Add salt to taste, turmeric, chilipowder, Peanut powder. mix well.
  5. Turn off stove. Serve with Rice or Roti.

Tips:
You can add other spices like coriander powder, garam masala to the recipe instead Peanut powder.
