Potato Curry

This recipe of Potato curry is versatile coz it pairs up with anything, from Rice to Roti to Dosa to Bread. Even curry puffs and samosas, Of course with lil modifications. I would say this potato curry recipe is a base to many of em recipes. 

This recipe is perfect with  lemon rice too. You can stuff it in Chapathis, roll and pack em in lunch box. Add mixed vegetable to this and mash lil more, it goes perfect for filling curry puffs. Add carrots and soaked Chanadal (Senagapappu), it's Masala Dosa stuffing etc etc. You got the point right. So it's a must, you know and try this recipe. Lastly I stuffed this curry in Hamburger buns along with sliced raw onions, tomato ketchup( Optional). They were so yummmmm:-)!

Ingredients: (I use US standard measuring; 1cup=8oz=250ml)
  • 4 Russet Potatoes
  • 1 onion
  • 1.5 tbsp ginger garlic paste
  • 1 tbsp Chilli powder
  • Salt to taste
  • 2-3 tbsp oil
  • Coriander leaves
  • curry leaves
  • Turmeric
  • Mustard seeds
  • Cumin seeds

  1. Peel potatoes to remove skin,clean with water and take em in a microwave safe bowl. Prick potatoes with a fork all around.
  2.  Add enough water to submerge potatoes, cover bowl with microwave safe lid. Steam for 6-8 minutes. After 3 minutes, flip em around. This way they cook evenly.
  3. While potatoes are cooking- Chop onions finely lengthwise and cut em in half.
  4. Grate/ grind ginger garlic.
  5. Chop coriander finely. 
  6. Add oil to a pan. Add mustard and cumin seeds. Let em splutter.Add ginger garlic paste. Cook few seconds.
  7. Now add curry leaves and then ginger garlic paste.Cook few seconds.
  8. Now add onions. Cook em till slightly browned.Add turmeric.


  9. Check potatoes whether they cooked properly, by poking em with a knife, all the way through. If you need to boil em for few more minutes, go ahead.
  10. Chop boiled potatoes into big cubes. Add to the pan.
  11. Mix well.
  12. Add salt and chilli powder. Stir well.
  13. Cook covered for couple minutes. 
  14. Add coriander leaves.Turn off stove.
  15. Serve with entree of your choice.
  16. Take a hamburger bun.Dab butter on both halves.Fry on pan.
  17. Now top the bottom half with potato curry.If you have big chunks of potatoes break em to small pieces so they sit well on the bread slice.
  18. Top curry with couple onion rounds.Squeeze some ketchup on top optionally. Close it with top half of bread.
  19. Enjoy the Veggie Burger.
