Cheesy Chutney Sandwich

Written By Praveena Gudipati on Monday, October 19, 2015 | 8:28 PM

The recipe is where East meets west. The cheesy sandwich, with a mint chutney spread and stuffed with onions and green chillies is no doubt cheesy and lil spicy and perfect for any meal.I have used two different breads for the sandwich to make em more interesting.Sourdough bread, Ciabatta rolls. Sourdough bread, like the name says is lil sour in taste.I love to have toasted sourdough bread along with my morning Tea. When it comes to cheese I use pepper jack or American or swiss cheese mostly for the cheese sandwich. If you have a personal favorite you can use that instead. Cheddar cheese also works well for this sandwich. If you are a vegan you can use sliced Tofu in place of cheese. Do check my Sprouts Tofu sandwich recipe. You can also use any bread for this recipe.

The green chillies chopped fine and pre cooked shortly in this recipe, adds a kick of spice with out being too hot. You can also add grated carrot to this recipe. You can make also use a grill pan for the recipe. The mint chutney has sour and spicy flavors and is perfect as a spread.Serve the sandwich with Tea for Morning breakfast or with a soup and salad for Lunch. Try my Asparagus Pepper salad recipe with the sandwich.

  • Add onions and chillies to pan and cook for about 30 sec. This will remove the raw taste and gives a lil sweetness to onions.
  • Take the bread slices and spread butter on em  lightly.

  • Take one slice of bread and toast it both sides.Spread some mint chutney on and keep it aside. You have to toast ciabatta on only one side.
