Sprouts Tofu Sandwich (Vegan Protein Punch)

How do you eat your sprouts. Lots of People run away from raw sprouts. Make a curry out of it, add spices ,Yum! but time consuming. But this recipe is so simple and delicious you will go for it again n again. Also it's quick. But you need to make sprouts though;-). It would even impress kids. Have a sandwich for morning breakfast which will keep you full and get you going till lunch.You can also pack it in kids lunchbox.

I made a batch of Moong sprouts recently. With those raw sprouts I made a sprouted moong salad first. Since Moong sprouts are tastier than lot of other sprouts, this salad was perfect to snack on. With the remaining sprouts, I boiled em and wanted to experiment for new recipes. My idea was to create a burger patty since everyone loves burgers. Since I'm planning for patty I overlooked the sprouts so I can mash em up easily.

Anyway one fine morning, for quick breakfast I wanted to make sandwiches since I have multigrain bread handy. I wanted to make my spicy cheese sandwiches but with Tofu. Then I remembered sprouts and want to incorporate em in the sandwich. Voila! I made these yummy sprouts tofu sandwiches. 

Tofu : Tofu is derived from curdling soy milk hence a rich and vegan protein source. You can buy this from any american grocery store. It's usually packed as small blocks with a decent expiration date when refrigerated.Since it's bland it can be enjoyed in various different ways; salads, sandwiches, curries,pulao. You can use it where ever you use paneer.

You can use any bread you have on hand.I used multigrain bread.Also I used a big slice of tofu but you can crumble it and use. In fact next time I'm gonna do like that. I have added chopped Serrano chillies to the sandwich .They gave nice kick but weren't spicy at all. If you wish for more spice add more chillies or chilli powder.

Ingredients: (I use US standard measuring; 1cup=8oz=250ml)
1 cup whole Moong Sprouts (Green gram sprouts/Pesara molakalu)
1/2 onion
1 carrot
1 serrano chilli or 2-3 thai chilli
Firm Tofu 
Tomatoes
salt to taste
3 teaspoon oil
Butter as required

Sprouts Tofu Sandwich step-by-step Recipe with Photos


  1. Make Moong sprouts. Soak whole moong (Green gram/Pesalu) for atleast  8 hrs.I soaked em in the night.In the morning Take the soaked pulses in a clean cloth or kitchen towel and twist it tightly and keep it aside for atleast 12 hrs. You will see these beautiful long white sprouts coming out od green gram.
  2. Alternatively you can use regular soaked and boiled green gram for this sandwich.
  3. Boil the sprouts in little water for 2 whistles, adding little salt.
  4. Take 1 cup boiled sprouts in a bowl. Mash with a fork lightly. 
  5. Chop 1/2 onions finely
  6. Grate carrot . You need about 4-5 tablespoons carrot. You can add more or less.
  7. Chop 2-3 Thai chilli or 1 Serrano chilli. Or alternatively use chilli powder.
  8. Mix all together. Add salt to taste.
  9. Now heat a pan, drop mixture into the pan and cook for a minute. It will take out the raw taste of vegetables but keeps em still crunchy.

  10. Remove the mixture into a bowl and keep aside.
  11. Slice a tomato into round pieces.Choose firm tomato. Remove the core/seed part from tomato.
  12. Now on the same pan add teaspoon oil and place the slice of tofu on it.Press it with spatula to get nice browning.

  13. Repeat the same on the other side.
  14. Remove Tofu and keep it aside. Make one slice of tofu for each sandwich.You can also crumble Tofu and brown it for a minute and add it to the mixture. You can also flavor tofu with little salt and chilli powder. 
  15. Now take slices of bread. Butter em and toast them on a fry pan. Alternatively you can use a sandwich maker. If you are making these for lunch box use sandwich maker so the stuffing stays put.
  16. Brown both the slices on both sides.
  17. Now assemble sandwich.Slice of bread, sprouts, tofu, 2 tomato slices, close it with second slice of bread.

  18. Repeat the same with all sandwiches.
  19. Cut the sandwich into half. Serve it warm.


Tips: 

  • You can also add pickled jalapeƱos to give a kick to the sandwich.
  • You can also add tomato ketchup as dressing.
  • You can add mashed avocado to the sandwich. 
  • You can use regular boiled whole moong for this sandwich
  • You can also make it on grill pan or sandwich maker.
