Beans are rich protein and fiber source. Also they contain good amounts of potassium which counter balances the sodium effect in the body.As a plant protein they are free of cholestrol. Sprouting the beans enhances their nutritional value.Sprouting means giving life to a new plant so they release nutrients and enzymes necessary for the process. By consuming the sprouts you are getting all that good stuff.
Anyway its undeniable fact that salads are healthy.This salad is refreshing and power packed as it has protein rich Whole sprouted Moong and a simple dressing and 3 servings of colorful veggies.Hint of sweetness from the veggies, tangy dressing goes perfectly well with the beans.Also whole Moong (Pesalu) are the easiest to sprout.
This salad can be had for dinner with warm sandwich on the side or with Roti and curry. Even better it's a good evening snack in adult lunch bag. As the lunch sugars gets depleted and hunger for snack begins eat this salad which satisfies your palette as well as your tummy;-). Try it with your kids too. My tot loved the sprouts as it is and he was munching on them as I'm working on the recipe.Kids love crunchy stuff.
You can add other favorite veggies of your choice to this salad like lettuce, cucumber.

Ingredients: (I use US standard measuring; 1cup=8oz=250ml)
1/2 cup Moong sprouts (Pesara Molakalu)
1/2 big tomato
1/2 grated carrot
1/4 cup finely cubed red bell pepper
Dressing:
2 teaspoon lemon juice
1 teaspoon olive oil
Salt to taste
1/4 teaspoon black pepper powder
Sprouted Moong salad step-by-step Recipe
- Soak whole Moong( pesalu)overnight. I soaked 1 cup of whole moong . I made this salad and with rest of the Moong I'm making sprouted Moong Tikkis.
- In the morning drain water and transfer them to a clean cloth, twist the cloth tight and keep aside.
- Check after 12 hrs and you will see nice long sprouts.
- Take half cup Moong in a salad bowl.
- Add chopped red pepper and tomato pieces.
- Add grated carrot.
- Dressing: in a small bowl add a teaspoon olive oil, 2 teaspoon lemon juice, salt n pepper.Whisk it.
- Pour the dressing over the salad. Toss it with a spoon gently.
- Serve it as it is or on the side with toasted bread.
Tips:
- You can add chopped Cucumber, lettuce to this salad.
- Add more dressing if you like.
