Potato Curry (For Masala Dibbarotte & Masala Pesarattu)

Written By Praveena Gudipati on Tuesday, March 17, 2015 | 12:29 AM

I made this potato curry to make masala dibbarotte but you can use this curry in so many ways.
This starchy tuber can be used to make so many yummy dishes. Samosa, veg puffs, masala Dosa, my masala dibbarotte, my masala Pesarattu are few examples of it.You can also use this curry and make bread sandwich using sandwich maker.you can even serve it along with Puri.

The stuffing for dosa is little different than this. I will post a different recipe for masala dosa curry.

Below, in the recipe I have given links to make masala dibbarotte and masala pesarattu, using this potato curry. So give a little twist to your regular breakfast with this curry.

Ingredients: (I use US standard measuring; 1cup=8oz=250ml)
2 potatoes
1/4 cup green peas
1/2 onion medium size
2 inch Ginger
2 garlic cloves
Salt to taste
3/4-1 tablespoons chilli powder
2 tablespoons oil
Turmeric
Curry leaves
Cumin seeds
Mustard seeds

Potato Curry step-by-step Recipe

  1. Rinse potatoes under water.Prick them with a fork so they can be boiled in microwave. Altenatively you can pressure cook them.
  2. Take em in a microwave safe bowl with water ( enough to cover half the way). Boil covered for 3 minutes. Flip em and boil 3 more minutes. You can pierce potato and see if it's cooked all the way. If not microwave for more time. Or you can finish rest of the cooking in pan. Mine take 6 minutes to cook completely.
  3. Chop onions finely.
  4. Keep ginger garlic paste ready.
  5. Peel the potatoes when they cooled down. Chop em roughly to medium size pieces.
  6. Heat oil in a pan. Add mustard, cumin seeds. When they splutter, add curry leaves.
  7. Now add onions and cook them till they turn slight brown.
  8. Add frozen green peas.
  9. Then add potato pieces. Stir.
  10. Add turmeric, salt to taste, chilli powder. Mix well. Cook covered for few minutes. You can add little water to keep curry moist, not wet.
  11. Turn off the stove and add chopped coriander optionally.
