Poha Mixture is one of the  easiest snack that can be done under 20 minutes. Having Chevda/ Chudwa with a cup of Hot Chai is my favorite thing.Also its a guilt free snack as it takes only lil bit oil, unlike many Indian deep fried snacks like Murukulu, Corn Chevda, Chekkalu etc. As Diwali is approaching I thought of making this. In Fact I made a big batch of it except that I forgot to note down recipe. So I made a small quantity for recipe sake again. You can multiply the Recipe to make  as much quantity as you want.

Poha comes in many varieties and Thin poha is perfect for this recipe.The naming might be confusing in the store.Just look for wide, thin flakes of Poha.If Poha shape is narrow and thick, it is usually deep fried. Since the Poha is thin it fries pretty fast. It's easy to make it, so there is enough to share with your friends during festive times. Many seasonings are added to this Chudwa. Some people add dry coconut pieces but that's  my least favorite so I did not add. You can add green chillies or red chili powder. I used chill powder in this recipe but if you like green chillies, make sure you fry them properly.Also you can add fried chanadal or Boondi or Mixture to the Chudwa. I usually make chivda and then add store bought Boondi to it. It’s a great quick fix and really tasty. Also when you are serving Chudwa, slice onions, squeeze em with lemon juice and serve on the side. It tastes awesome.You can also add finely chopped onions to the Chudwa, squeeze lemon juice, mix and serve.I love love love them both ways. You can also add lightly roasted Murmura (Borugulu) to the Chivda. Pick a way you like and enjoy the snack. Since I wrote this recipe down I made it many times and every time it turned out perfect.

Ingredients: (I use US standard measuring; 1cup=8oz=250ml)
  • 4 Cups Thin Poha
  • 3 tbsp Peanuts
  • 1 tsp Cumin seeds
  • 1.5 tsp Sesame seeds
  • 1 tsp Coriander seeds
  • 2 tbsp Dalia
  • 1 sprig Curry leaves 
  • 1 tsp chilli powder
  • Salt
  • Garlic cloves( Optional)
  • 12 tsp turmeric 
  • 1/2 cup Boondi (optional but highly recommended)

          Poha mixture Step-by-Step Recipe

  1. Take 3 Tbsp oil in a wide, deep pan. Keep the flame on medium. Add peanuts. Fry till they are almost done.Add coriander,Cumin seeds. Add sesame seeds. Fry for a minute. 
  2. When everything is done, add Dalia ( Putnalu/ Roasted Chanadal). Add curry leaves. Fry for a minute. 
  3. Add Poha and fry on medium flame stirring constantly.
  4. Now take tbsp oil in a bowl. Add salt to taste and turmeric. Add this to Poha and stir. This way salt will coat Poha perfectly. 
  5. Keep frying. 
  6. When Poha is almost done, Add chilli powder, crushed garlic. Stir. 
  7. Keep frying.
  8. Check to see if poha is done by tasting some. Also check Salt. haven't timed mine😔 but it took less than 10 minutes.
  9. Turn off the stove.
  10. Take Poha in a wide bowl and let it cool.
  11. You can add store bought Boondi or Mixture to make it more tasty.
  12. Store in Airtight container. 
  13. serve with a cup of Hot Chai or with sliced onions,Lime/Lemon. 
Tips: 
  • You can add green chilli to the recipe but be sure to fry it properly so Chevda stays good for long. 
  • You can add garlic cloves to it but be sure to add thin cloves and fry em. You can add crushed garlic instead. 
  • You can add more oil if needed.
