When you are craving for a Pizza and not in a mood to prep from scratch this is a great recipe to try. These Naan Pizzas are so quick, easy to make and better than regular Pizzas.Kids will love this. I got these the Naan from Costco.

- Naan (I used Costco 'stone fire' Mini Naan)- 4
- Any Pizza sauce (I used Bertoli Marinara sauce, you can also use Alfredo or pesto sauce) -1/2 cup
- Mozarella cheese -1.5 cups
- Parmesan cheese -1/4 cup
- Any Veggies of choice (I added Red bel peppers, yellow bel peppers, onions, broccoli, tomato) -4 mini peppers, 1/4th onion, 1/2 tomato, few broccoli florets approximately
- Small piece of Paneer (1/2 cup cubes) if you have
The ingredients are pretty flexible in amounts means add cheese, sauce, veggies more or less according to your choice.I gave amounts I used.
- Pre heat oven to 400F. If using a ceramic pan you can crank it up to 425F.
- Chop Paneer into cubes. Marinate paneer in little olive oil, salt, chilli powder n lightly fry to brown em in a pan. No oil needed to fry as paneer is coated with oil. Keep it aside.
- Chop veggies into medium size pieces or lenghtwise. Take small broccoli florets so they cook well. I used red , yellow mini bel peppers, broccoli, onions, tomatoes. You can add veggies of your choice (Corn, Jalapeños, black olives Zucchini, artichoke etc).
- Sauté all veggies except tomatoes in a Tsp olive oil for 2-3 minutes. No need to cook all the way as they will cook more in oven. Keep veggies aside.
- Stack Naan on a pan to bake.
- Spread Pizza sauce on top of Naan.
- Top with Mozarella, Parmesan cheese. Use cheeses according to your taste, more or less. I cover until you don't see the bottom leaving edges. Check picture.
- Place toppings. You can add ore or less veggies or no veggies if you like cheese Pizza.
- Bake for 15 minutes or till cheese melts.
- Cut in half n enjoy
- Makes a great snack, dinner or brunch.I paired it with Garlic bread for dinner.
You can pair it with my Broccoli cheddar soup to have an yummy dinner. Do try along Easy Veggie lasagna, raspberry lemonade and a light salad to prep Italian theme dinner just like in olive garden ;-).
