One of my son's favorite lunchbox menu is Dosa. But he doesn't like to take any dips along with it. So I drizzle Peanut powder on top of dosa and roll it and make pieces. That's the usual way he takes it in his lunch. But once in a while I make these Egg Dosas for lunch box which is also his fav. Carb& protein rich Dosa along with protein&fat rich Egg makes it a complete meal. When I pack them for lunch I pack couple of Egg Dosas along with fruits or veggies and there it is a nutritional lunch box.

So with one  Dosa batter you can make different varieties of Dosa so the kids won’t get bored of eating the same thing.

If you are serving these at home for breakfast you can top it with veggies, mashed Avocado. Egg dosa with moist, buttery Avocado  tastes so delicious.

To make Egg dosa, egg mixture is spread on dosa while dosa is cooking on the pan. This way it is stuck to Dosa and it’s easy to roll and cut and pack for lunch box.I have added only onions, chopped bell pepper in the egg mixture but you can also add your kid’s favorite veggies. The bottom line is, You can follow the recipe and make little changes according to your kid's liking.I have shown here ingredients to make one egg Dosa but you can multiply them to make the quantity  you want.

I have also tried the Dosa roll with cheese which came out pretty good.I will be posting it soon.

Dosa Batter:
  1. Here is a simple recipe to make fail proof Dosa batter:
  2. Soak 1 cup Urad Gota (whole Urad with no skin), 3 cups Rice (I prefer Brown rice),  2 tbsp Chanadal/Senagapappu) (to enhance fermentation) and 1 /2 tsp Fenugreek seeds(Mehi dana for nice texture).
  3. You can soak Dal, Rice separately or mixed.
  4. Soak overnight or atlas 8 hrs.
  5. Grind to smooth batter. I use Ultra wet grinder.
  6. Ferment in a warm spot. In an oven with it's light on is perfect. Or heat Oven at 350 for 5 minutes, turn off and keep bowl in there. It has to be a stainless steel bowl. Do not use plastic.
  7. After fermentation, gently mix batter, add water to small quantity of batter and make Dosa. I use a Cast Iron griddle for this, my recent acquisition and I love it. With little care, they are good for years and healthy cooking choice. Here is a link if you are interested.

8. You can use this batter to make Utappam, Pongalalau/Appe or Punugulu (Fried fritters).

Egg Dosa recipe :

  1. Finely chop onion and take 2 tablespoons of it in a bowl. Also 1-2 tbsp finely chopped green bel pepper. Add salt, chilli powder to the bowl.Mix nicely. This way when you add egg, the chili powder will not clump.
  2. Now break open 1 egg directly into the bowl. Whisk it with a fork or whisk nicely.Keep it aside.
  3. Spread Dosa batter on a heated pan. Spread  thicker than usual so it can hold the Egg mixture.  Keep the pan in medium-low heat so dosa will not burn until omelette is done.
  4. Top dosa with 1 teaspoon oil.
  5. Now add Egg mixture to the center of Dosa slowly and keep spreading as you pour with the back of a spoon.
  6. Spread egg mixture in a thin layer into the dosa crevices. Cover with a lid if you add lot of  veggies. This will help veggies done well.
  7. Cook till egg is almost done.Flip Dosa and cook for 30 sec and it's done perfectly.
  8. Take Egg Dosa on to a serving plate.
  9. You can top it with avocado optionally. I love to have it with Ketchup drizzled on top.
  10. Roll Dosa and cut into half. Pack for lunch box with a side of fruits or veggies.

Tips:
  • you can add grated carrot, spinach, try color peppers or any of your favorite veggie to the omelette.
  • you can cook veggies for couple minutes on fry pan, add to the beaten egg and use in Egg Dosa.
  • You can add cheddar cheese, paneer or any other grated cheese on top of Egg mixture.
