Zucchini Tomato curry

Zucchinni or courgget is an Italian Squash. It's taste is similar to Indian cucumber or Dosakaya. As a vegetarian I would love to embrace veggies from different cuisines and use them in my cooking. Zucchinni is one  such vegetable I use abundantly in my kitchen. 

Since I already use many different squash in my cooking it wasn't that hard to to make delicious recipes using zucchinni. I use zucchini in currys, Pastas,Soups, Salads.I also use grated zucchini in many of my Tot's dishes. This recipe is a very simple one but so tasty. It can be had with Rice, Chapathi or Quinoa.Don't forget to try my Zucchini Tofu curry.

Nutrition:Zucchini is rich in Vitamin A which helps with vision and immunity, Vitamin C with antioxidant properties. Zucchini has good amount of Potassium, phosphorus minerals. Zucchini is a good source of B6  vitamin too.

In this recipe I have used roma tomatoes. These are similar to indian tomatoes with little sourness.You can also use any other tomatoes.

Ingredients: (I use US standard measuring; 1cup=8oz=250ml)

2 zucchini
2.5 roma tomatoes 
1 tablespoon chilli powder  or adjust
Salt to taste 
1 medium onion 
2 tablespoons oil
Coriander leaves
For seasoning
Mustard seeds
Cumin seeds
Curry leaves

Zucchini Tomato curry step-by-step Recipe with Photos


  1. Chop the onion into small pieces
  2. Chop tomato Into small pieces
  3. Cut zucchini into 2 halves and cut each half into 3 pieces lengthwise. Now chop em into medium size pieces. You can make smaller pieces if you wish.
  4. Heat oil in a deep pan. Season with mustard seeds, cumin seeds. When the seeds splutter add curry leaves.
  5. Then add onions to the pan and cook till they tuen slightly brown.
  6. Now add chopped tomatoes. Cook till soft and turns into a smooth gravy consistency.
  7. Add salt and turmeric at this point as they will help soften tomatoes. You can add salt enough for entire curry.
  8. Now add zucchinni pieces, stir. Cook covered for 10-15 kids minutes, till
  9. The pieces are soft and changes color.You can add water to the curry as needed.
  10. Once zucchini is done add chilli powder and stir in. Cover the pan and cook for a minute.
  11. Turn off the stove and add coriander leaves. Mix the curry and transfer into a bowl.
  12. Serve with Rice, Roti or Quinoa.


Tips: 
  •  You can add chilli powder according to your taste.
  • You can also add Coriander powder,garam masala optionally.
