Tindora fry (Dondakaya/Kovakkai Fry)

Who wouldn 't love frys. No matter which veggi it is they are all yummilicious. The Indian way of frying veggies is chop em, deep fry em and add spices. They go well with steamin hot rice and Plain dal( Cooked yellow lentils).
My family loves frys. So once in a while I make these.For Okra, potato and Egg plant I stopped deep frying n started shallow frying. They are still yummy n more over healthy n guilt free.Try my Eggplant, Potato shallow fry recipes on this blog.
But Tindora can't be shallow fried as they take more time to cook. So the best way is to deep fry.

The usual spice powder added to frys is Garlic Karam, Kobbari Karam( Coconut spice powder), Palli podi( Peanut powder). Egg plant goes well with Coconut spice powder. Tindora goes well with garlic or coconut. Some times I mix different combos and use:-). Anyways today's recipe uses Garlic Karam.

Also when frys are done deep fried peanuts and curry leaves are added for extra textures and flavor. To skip more oil I have roasted em with little oil.

Ingredients: (I use US standard measuring; 1cup=8oz=250ml)
2 cups dondakaya
2 tablespoons Peanuts
Curry leaves
2 garlic cloves
5 tsp chilli powder or adjust
Salt to taste

  1. Chop Tindora into 4 pieces lengthwise and then cut into half. So 1 Tindora makes 8 pieces. You can also chop em round. Make even size so they all fry same time.

  2. Heat oil in a Kadai for deep fry.
  3. Drop veggies into Kadai carefully so not to spill oil.
  4. Fry em till you see change in color. 
  5. While veggis are frying, Peel garlic cloves. make spice powder.
  6. Take 1 garlic clove, Salt to taste, Karam (Chilli powder) in a coffee grinder and pulse few times. 
  7. Take it into a bowl and add rest of the grated garlic. Add fried Tindora to it.

  8. Mix it. 
  9. Roast peanuts in a teaspoon oil. Add curry leaves. Roast the leaves. Add it to the frys.

  10. Mix well and serve with Rice n Plain dal.
