Happy Sankranti/Pongal to all my readers. Like any other Indian festival, Sankrati is celebrated by making several delicacies. The delicacies change from region to region and also from one house hold to another. I have put together many such festive recipes in this post.I will keep updating more as I go further :-). Sweet :

Kajjikayalu/Karanji/Garjelu/Gujiya : Sweet stuffed shells made with flour are deep fried/baked to golden perfection.


Bobbatlu/Holige/Obbattu/Puran Poli :  Protein rich lentils and jaggery stuffed inside  wheat flour flat bread pan fried. Delicious and healthy.

Rice Kheer (Rice pudding) :Rice cooked in milk and Ghee and sweetened by jaggery (Molasses). A quick  pressure cooker method to take it easy on a festive day with out compromising the taste.

Quick Coconut Ladoo: 3 main ingredients and 15 minutes, yummy dessert is ready. Can be made in bulk for a festive party/Potluck



Savory:

Chakli / Arisi Murukku : Deep fried, crunchy, gluten free Rice flour snack.

Chevda/Chudwa :Easy, guilt free, quick festive snack made with minimum oil.

Ragi chekkalu/Thattai/Nippattu : Deep fried, crispy snack made with millet flour(Ragi flour).


Pulagam and Vankaya Bajji : Sesame rice accompanied by Tangy,spicy eggplant curry is a Telangana delicacy made for Sankranti.
Khara Pongal : Rice and lentils cooked with ghee, another Sankranti dish.
Rava Pongal :Healthy Pongal made with Cracked wheat and moong dal.


Raw Mango rice : Tangy rice made using grated green Mango is an all time favorite festive recipe.
Coconut Pulao : A quick Pulao made with Coconut milk is perfect for festive parties/Potluck.
Lemon Rice :Tangy, lemony rice is every Indian Kid's favorite.
Spicy Jowar Roti: A festive delicacy of Telangana made with Jowar flour, gluten free.

Spicy Rice flour Roti:  A festive delicacy of Telangana made with Rice flour, gluten free.
Vermicelli curd rice:  Vermicelli and yogurt dish to balance all the festive, spicy food.
