Mango Mousse Cake

I’m not a big fan of cakes but mousse cake is something different.It has the delicate mousse paired with layer of cake and no cream.It's all scrumptious and decadent mousse sitting on a thin layer of cake.The cake acts as a solid surface that can keep mousse together. Digging into that delicate mousse cake and taking a bite of it is a heavenly experience.

So I love mousse cakes and I love mango flavored desserts.This made me fall in love with Mango mousse cake right away. You can find different kinds of mango mousse cakes in bakeries.My version has a vast layer of delicate mango mousse which is based on a thin layer of white cake. 


For me, Mango mousse cake has so many memories tied to it.Living in Los Angeles, we have a very famous bakery near our home and the first time when I tasted mango mousse there, it felt yum! Since then we celebrated many of our special occasions with that cake.They used to make the cake the same way I make, What i meant is I tried to replicate it ;-). Last new year I made this cake and it came out so perfect.I made the cake again this new year and decided to keep it a tradition to make it for every new year.Starting your new year with some thing sweet, even better, your favorite one, what would be better than that.

If you have already seen my Mango mousse recipe, it is the same thing I have in here. I used white cake because my favorite bakery cake has the same white cake base. White cake is dry so it works better with mousse. After a day, gradually getting soaked with mousse, the cake becomes moist.Also to make this cake you need springform pans.So if you really love this cake you need to buy these pans.Since it's a mousse cake, once it's settles down you cannot remove it out of the pan like regular cake. Spring form pan's sides come off leaving only base underneath. You can also use these pans to make regular cakes and it's really easy to remove cake off these pans without saying Uh-oh! Or grrrrrrrrrrr! :-).


I bought a 3 piece set of springform pan online for under $15.To make this recipe I used 9 inch and 10 inch size pans. I bake the cake in 10 inch pan. This step can be done in regular pan too. If you already have a 10 inch round cake pan all you need to buy is 9 inch springform pan. Now the cake and mousse will be stacked in 9 inch springform pan. Tricky ha! After so much thinking I have developed this fool prof method myself. Initially I used to bake cake in 9 inch pan and stack mousse in the same pan. This way the only problem is the cake pan bottom stays with the final product. It doesn't look professional but serves the purpose. Don't worry if this is all sounds confusing. Follow my recipe and the final cake is all worth it and you will always get lot of appreciation. And the taste is unbeatable.In fact we stopped buying this cake from outside.

Ingredients: (I use US standard measuring; 1cup=8oz=250ml)
1 can Kesar mango pulp (Bought in Indian store)
8 oz heavy whipping cream
8 oz cream cheese
2 Packs gelatin
1 cup water
1 box white cake mix
Ingredients to make cake as per instructions on the box
Berries/ fruits to decorate
10 teaspoon sugar
9 inch round springform pan
10 inch springform or any cake pan



Mang Mousse Cake step-by-step Recipe with Photos

Bake White Cake: Use Springform pan 10 inch size or any 10 inch round cake pan.

  1. Prepare white cake batter according to the instructions on the cake box.
  2. You do not need whole box of cake mix. I use a thin layer of cake for the base of mango mousse. But I prepare cake batter from whole mix. 
  3. Rub the cake pan with oil on all the sides. This will prevent cake from sticking to the pan. (I used parchment paper which makes it easy to remove cake once done.Cut parchment paper to the size of cake pan bottom. Rub oil on bottom so the parchment paper stays put. Place it in the pan).
  4. Then I pour 1.5 inch deep cake batter in the cake pan. It doesn't have to be exact as you can always trim it to the size you want.
  5. I pour the rest of the batter in another cake pan. So I bake two cakes. One for mango mousse and the other cake, for my kids to munch on :-).
  6. Bake the cake according to package instructions. Since the cake is thin it will bake very fast. Mine took 10 minutes. So check after 10 minutes.Times will vary depending on oven.
  7. When done, remove  pan. Leave cake aside to cool for 10-15 minutes.
  8. If you are using a store bought cake board keep it ready. Also you can use any flat tray that you are going to display cake on, as a cake board.
  9. Now take a knife and loosen sides of cake. Remove springform pan sides if you used one. 
  10. Now Slowly remove  cake from bottom and slide it onto the cake board.Now cut the top of cake to level the surface.
  11. Cake for mousse cake is ready.


2. Prepare Mousse Layer:
Now Prepare 1 recipe of Mango mousse. Follow the recipe from the link.







3. Stack layers:
Now take the 9 inch springform pan and use without bottom part. Place the pan around prepared white cake. Cake should be covering the bottom entirely. This is important as we will pour liquid mousse on the cake and it shouldn't escape out. Lock the pan.
Pour the mango mousse over white cake to the height of pan or as the quantity allows.
Carefully move cake to refrigerator.






4.  Refrigerate the cake.
After 2 hours check  cake. It should be solidified by then. Or leave it for more time. 
When ready, open springform pan sides gently. Now the mousse is sitting on cake which is on the pan bottom or cake board.



4.Decorate the cake with berries/fruits of your choice.I made the below cakes for last two new years.The last cake was made recently for birthday.This time I simply decorated it with few plum pieces.





5.Cut the cake with a cake knife and serve. 
The most delicious and heavenly cake is all yours to enjoy. 


Optional: 

  • Take a cup of Whipping cream , add 5-6 tablespoons mango pulp. Add 3 tablespoon sugar.
  • Now beat it using electric mixer till it forms soft peaks. 
  • Your home made mango flavored frosting is ready.
  • You can use it to decorate the cake top.
  • Or simply put a dollop of mousse on top of a slice of cake and serve.
