Paneer Cracked Wheat Upma

Don't want to leave those cute little 'Tots' out. So my next recipe is for them. The recipe is as healthy as it sounds. Cracked wheat is nothing but crushed whole wheat. It is a good carb source with natural fiber. Rich source of Iron too. This recipe also calls for Carrot. As you all know, Carrot is rich in Vitamin A and fiber. Paneer is rich in proteins, calcium and Vitamin D which is good for the growing kids / bones. Don't want to bore you but I think you got the point.
 Don't want a long recipe name but another main ingredient in this recipe is Carrot. Paired with Paneer and Carrot this Cracked wheat Upma is a rich breakfast for those cute little monsters to start their day. Also in this recipe I used 2 green chillies as my son can take the spice. But you can cut down as you like. The ginger and cumin seeds in this recipe is good for the digestion. I used sesame seeds for added Iron source. My Son likes his Upma soft and smooth so I did not put the dals. But you can add Minapappu (Urad dal) and Senagapappu (Chana dal) in the seasoning.

Ingredients: (I use US standard measuring; 1cup=8oz=250ml)
1 cup water
1 tablespoon Ghee
1/3 cup Cracked Wheat fine variety
1/4 cup grated carrot
1/4 teaspoon grated ginger (Allam)
2 tablespoon grated paneer
1-2 green chillies
1/4 teaspoon jilakara (Cumin seeds)
1/4 teaspoon tella nuvvulu (white sesame seeds)

Paneer Cracked Wheat Upma step-by-step Recipe with Photos

  1. Cut green chili into 2 piece.Grate ginger, carrot,paneer and keep them ready.
  2. Heat 1 Tbsp ghee in a pan. Season with Sesame seeds and cumin seeds. When the seeds splutter add grated ginger and green chilli (between the photos n cooking forgot to add ginger and chili so.. sauteed separately and added :-(

  3. Fry them 30 sec.
  4. Add grated carrot. Fry for couple of minutes until you see color change.

  5. Add  water to the pan. When water starts boiling add cracked wheat slowly and mix with a spoon.

  6. Simmer the stove and cook it covered for good 8 minutes. If you see Upma getting harder, add more water.
  7. At this point add grated paneer and mix into the upma.
  8. Cover the pan with lid and cook for a minute. Turn off the stove.
  9. Remove the chillies.Top it with Ghee and serve/feed with Yogurt.

Tips: 
  • Choosing the cracked wheat is an important. I use the very fine variety as I think the texture suits the little ones. But you can use coarse variety too. It might need more cooking time.
  • You can also add other vegetables of your choice to this recipe. I use grated Zucchini when I have it on hand.
  • Use a cheese grater to grate Carrot and Paneer so they will mix-in nicely.
  • you can serve it to your elder kids too. Serve with Peanut chutney or Palli podi(Peanut powder).
