This buttery flaky yummy Croissant is one of our favorite family breakfast. Even though we are all fond of it, each of us relish it in a different manner.
My son likes it with cream cheese. Husband loves to have it with cream cheese and blueberry spread or as Croissanwich. I like to eat it plain dipping in my morning tea ☺.
This obsession of croissant started during our Europe trip. We stayed in a hotel for an extended period of time in Vevey, Switzerland. There we used to find these freshly baked croissants daily for the break fast along with cream cheese and blueberry spread. It was our favorite from the breakfast bar. We use to devour them along with a warm cup of freshly brewed coffee. When we were back in USA we got the blueberry spread from local grocery store.
Coming to Croissanwich we used to have it in a fast food joint in USA. They serve it with cheese and egg minus meat as we are vegetarians. I added avocado to my recipe because it would balance the dry ingredients, act as dressing. Also I want to add something healthy. I took spicy pepper jack cheese since we have a spicy palette but you can substitute with some other cheese. Cheddar cheese or American cheese also goes well with this recipe. When making the omelet I break the egg directly into the pan since we are not adding any vegetables to it (Fried egg). Also I like to spread the yellow into the mixture because I want the tasty part in every bite.
Last but not least I buy croissants from 'Costco'.They are big, super fresh and soft, freshly baked and very tasty. They are perfect for this recipe. But you can make these with any croissant.

- 1 Large Croissant (I use Costco croissants)
- 1/2 Avocado
- 1 Cheese slice (I used pepper jack cheese)
- 1 Egg
- 1 Teaspoon oil
Croissanwich Recipe
- Coat a small skillet with little oil.
- Break open the egg into the skillet directly.
- Spread the yellow part of the egg with a fork.
- Put rest of oil on top of the mixture and add couple of pinches of salt.
- Cook the mixture until well done.It might take couple of minutes.
- Flip the omelette and cook the other side for a minute.
- When its almost done take a slice of Pepper jack cheese and place it on top of the omelet.Let it sit until you see the cheese color changes.
- Now turn off the stove and keep the Omelette with cheese aside.
- Now take an Avocado, cut it in the middle and spoon out half the Avocado.Mash or chop.
- Take a knife and make a slit in the Croissant lengthwise all the way. Spread the avocado inside the croissant
- Now fold the omelet with cheese in middle and place it into the croissant.
- Enjoy it with a cup of coffee or freshly squeezed OJ.

Tips:
- You can add a leaf of Lettuce and slice of Tomato to the sandwich.
- Serve it for lunch along with hot cup of Soup and Kale chips.
Masala Croissanwich
East meets west in this recipe. Freshly baked Croissant stuffed with spicy Potato curry Indian style is a must to try. I can have it every day. The Croissanwich is delicious and filling.When I make Masala dosa stuffing, the next day I would make these Croissanwiches with left over curry. These are perfect for lunch box too. You can have these for any meal. Serve with some salad to make it complete. For me just the sandwich serves as meal.

Ingredients:
- 2 Croissant
- 1/2 cup Potato curry
- 2 Eggs
- 1 Avocado
- Ketchup optionally
- Take a Croissant. I used Costco Croissant.Slit lengthwise.
- Heat a pan. Break open an egg into the pan. Spread yellow or leave. Season with couple pinches salt and 1/4 tsp Chili powder optionally. cook both sides. Keep Omlette aside. This step is optional but recommended. You can skip Omelette if you want.
- Take the croissant , Place Omelet first. Stuff with 1/4 cup of Potato curry or adjust.
- Top with 1/2 Avocado chopped or mashed, optionally but recommended.
- Top with Ketchup optionally.
- Serve with freshly squeezed OJ or cup of coffee. Enjoy.
