I have Egg-o-mania :-).Love em any way they are done,hard boiled,omelet,curry,stir fried etc.Plus Egg is a complete protein source meaning it has the 9 essential amino acids that human body cannot make itself along with the 11 other amino acids. If the eggs are omega3 variety they have good amount of Vitamin A and E.All good things in one small egg.
One of my favorite egg recipe is stir fried spicy egg curry which is made with hard boiled eggs.I learned it from my mom.I haven't seen this recipe anywhere.This recipe is my son's favorite too.I have to make this at least once a week. We both savor this with hot rice.I will soon post this.
Quick fact: If you are wondering whether to choose brown or white egg,don't break your heads.The color of egg depends on breed of the hen.Other than color they are the same.
Egg Bhurji is a quick and standard recipe.It's typically scrambled egg with onions and spices. Goes with both Roti and Rice or if you are like me you can eat it as it is directly from the bowl ;-).You can also have it with toasted Bread or make a sandwich using sandwich maker.The way we make it back home is with onions but there might be other variations.You can also add other veggies like green bell pepper(Capsicum).Have cholestrol issue, then better use whites only.

Ingredients: (I use US standard measuring; 1cup=8oz=250ml)
4 eggs
2 green chillies
1 big onion
1 teaspoon chilli powder
6 teaspoon oil
Mustard seeds
Cumin seeds
2 cloves garlic
2 inch Ginger piece
Egg Bhurji step-by-step Recipe with Photos
- Cut the onions lengthwise and cut them into 3 sections.
- Cut the green chili into small pieces.
- Heat the pan and take oil in it. Season with mustard seeds and cumin seeds. When the seeds splutter add green chillies.Fry it for 30 sec.
- Add Ginger garlic paste,fry for 30 sec.
- Add onions. Sautee until they change color.Add some turmeric to the onions.I like to add turmeric after I add onions as the onions will get nice yellow color.The color then transfer to the other ingredients you will be adding.
- Time to add Eggs. Break open the eggs into the pan. Keep stirring to spread egg mixture. Stir in between so the egg mixture won't clump together.
- When the egg mixture solidified add salt and chilli powder.Mix into the Bhurji well. Let the eggs embrace the flavors for couple of minutes.
- Now time to add the secret ingredient : ) milk. Add milk and stir once and turn off the stove. Milk makes the bhurji moist .
- You can add little bit garam masala in the end.I did not use it as I like it with out masala.
- You can add a veggie like green bell pepper which goes well with it.
