Spicy Egg Fry

Writing down this recipe I wasn't sure what to call it. Egg fry or stir fry or Egg curry. The main ingredients in this curry are Eggs and spices. This is my Mom's recipe and my kid's favorite. Haven't seen this recipe anywhere and wanted to share. Have boiled eggs on hand this recipe will be done in 10 minutes.This egg curry goes well with Rice and Ghee. Also tastes good as a side with Pulao or Biryani. Have left over, you can make a sandwich with Multigrain bread. It even tastes better as it is, at least for me :-).

Ingredients: (I use US standard measuring; 1cup=8oz=250ml)
3 tablespoon oil or adjust
4 eggs
Salt to taste
3/4 th tablespoon chilli powder
For seasoning:
Mustard seeds
Cumin seeds
1/2 teaspoon Urad Dal (Minapappu)
Curry leaves
2 garlic cloves crushed optionally
few coriander leaves

Egg Fry Recipe

  1. Hard boil the eggs.I used 5 Eggs which is little more than 2 servings.4 eggs make 2 servings.The extra goes in munching in between :-).
  2. Remove the shell and make multiple slits around eggs. This prevents Eggs from splattering.
  3. Heat a pan and take 3 tbsp oil in it.
  4. Now place the eggs in the pan and fry em by flipping sides to ensure egg is browned all sides. 
  5. When egg are almost done add mustard, cumin,urad dal and curry leaves. If you add    seasoning first, by the time eggs are done it will be burned.
  6. Now cut the eggs in the pan with the spatula roughly.You can cut big or small based on your preference.Cut the yellow too. Don't mash it though.
  7. Now add salt and chilli powder. Mix in.cook for a minute or two and turn off stove.

  8. Garnish with coriander  and serve.

Tips: 
  • You can add coriander powder and crushed garlic to the curry.
  • Having guests over. Boil the eggs and store em in refrigerator day before. cuts down time on the day of party. Makes a great side with Pulao. Roti or Biryani.
  • Roll it in Chapathi and pack in Lunchbox.
