Roasted Bengalgram (Putnala) Podi :

To have Steaming hot Rice topped with Ghee and mixed with Podi is a delectable experience and rejuvenates your taste buds. Podi is a dry Powder like side dish that can be had with several South Indian Dishes like Idli, Dosa, Upma, Rice. We also mix em with pickle and have it with Rice.When you serve with Idli or Dosa etc it is usually mixed with oil or Ghee or you can also have it dry to cut calories.

Peanut Powder, Idli Karam(Karappodi), Dalia (Putnalu/Roasted Bengalgram) powder, Curry leaves powder are few such powders that I commonly make. Also Coconut powder, Sesame powder, Cucumber seeds powder(Dosaginjala podi) are made often. With Powders on hand, on a lazy day you can survive with just cooking Rice and also eat guilt free as they are nutritious. The lighter color podi in top and below pics is Putnala Podi.




The Powders with Lentil base are rich in Proteins. I drizzle Peanut and Putnala powder on top of Idli smeared with Ghee or Utappam and pack in Kids lunch box. It makes their lunch box mess free, also provides Protein in their meal. Karappodi is a spicy powder that we drizzle on top of Dosa when making. It is then served along  Peanut or Coconut or Tomato Chutney.



Roasted Bengalgram (Putnalu) Powder is very easy to make and quickly done in 15 minutes. It stays fresh for months. Store em in steel or glass containers. The spice level in the powder is easily adjustable. For kids I make less spicy and for us more spicy. Mix Rice with Mango pickle and this Podi together and you will be in food heaven:-).

Total time:

  • 15 minutes

Ingredients (I use US standard measuring; 1cup=8oz=250ml):

  • 1 Cup Roasted Benglgram (Dalia/Putnalu)
  • 1 tsp Jeera (Cumin seeds)
  • 1 clove Garlic
  • 1 tsp salt or adjust 
  • 1 tbsp Chilli powder or adjust 

Putnala Podi Recipe

Dry roast 1 tsp Cumin in a pan. 
Add 1 Cup Roasted Bengalgram (Putnalu/Dalia) to the same Pan and roast for few minutes. 
It is to remove any moisture present and to turn them crunchy. No need to brown em. 
Take Dalia (Putnalu) on to a wide plate. Let em cool. 
Take Putnalu (Dalia), Cumin, Salt, Chili powder, garlic clove in a Mixer Jar, blend to smooth 
powder. Adjust spices according to your preference.
Store in an airtight container and enjoy for few months.I use the below containers. They are 
pretty and design bottle gives a grip to hold as opposed to smooth glass bottles.
Serve with hot rice, Ghee; Drizle on Dosa or Utappam; mix with Rice, Mango pickle and enjoy.
You can use this powder to coat stir fried veggies like Bel pepper at the end. 
Grind this along with fresh coconut pieces, little bit tamarind to make chutney to go with Idli, 
Dosa etc.
Serve with hot rice, Ghee; Drizle on Dosa or Utappam; mix with Rice, Mango pickle and
enjoy.
