I don’t make it a habit of using frozen veggies in my cooking but I always keep at least 1 or 2 varieties in freezer. When I’m out of fresh veggies and don’t have time to shop, I use em. Also when I’m cooking too many things for guests, I use em to cut down chopping time. Also When I have lot of produce from my backyard garden, I chop those n freeze. It's really handy on a busy weekday too.
Anyway today is one such day I ended up making cluster beans curry. I got these from frozen isle in Indian store. It goes well with Rice, Quinoa, Millets, Rice flour roti. It’s a very quick, tasty recipe in Instant pot. Sesame seeds are rich in calcium and adds so much flavor to this recipe.I made this in my 6 Qt Instant Pot .

Ingredients:
2 packs Cluster beans (12 oz each) -I used Deep brand frozen cluster beans from Indian store. If using fresh ones, about 3.5- 4 cups chopped cluster beans.
2 tbsp oil or adjust
1 onion
Salt to taste
1 tbsp chilli powder , green chilli paste or adjust
1/4 cup Brown Sesame Seeds powder
1/4 cup dry coconut powder (I used store bought)
1 tsp Cumin seeds
1 tsp Mustard seeds
1/2 tsp turmeric
IP Cluster bean curry recipe
- Chop one onion into small cubes.
- Press Sauté button on Instant pot. Add 2 tbsp oil.
- Add 1 tsp Mustard seeds, 1 tsp Cumin seeds, 1 sprig chopped curry leaves. Once splutter add chopped onions. Sauté till golden brown. Add little salt so onions release water n cook better.
- Add 2 packs frozen cluster beans, 1 tbsp water. If using fresh beans, add more water. Frozen beans release water so I added little water.
- Add salt to taste, 1/2 tsp turmeric, 1 tbsp chilli powder or adjust. You can use green chilli paste instead .
- Mix well.
- Press cancel button.
- Press Pressure cook, high pressure, 3 minutes. Seal the valve.
- Once done, wait 5 minutes (NPR 5) and release pressure.
- Press Saute button.
- Add Sesame powder , coconut powder. Mix. If any water left, heat few minutes to dry up.
- Turn off Instant pot.
- Serve curry with Rice or Rice flour roti.
