Crunchy Tortilla chips topped with re fried beans, cheese n veggies AKA Nachos are one of my family's favorite snack. Due to Corona lock down situation we stopped eating outside And today we are craving for Nachos. So I made em from scratch and they turned out super delicious ! We ate em so fast and we are all craving for more :-).
I do not have store bought Tortilla chips but I have uncooked Tortilla I got from Costco store. I already made quesadillas using these many times and today I utilized em to make some fresh baked Tortilla chips. So my Nachos gotten more healthy with no deep frying.

Ingredients (I use US standard measuring; 1cup=8oz=250ml):
Refried Beans (You can use Canned if you prefer)
- 1/3 Cup Black beans
- 1/4 tsp Cumin powder
- 1/4 tsp Chilli powder
- Little salt
Tortilla Chips (You can use Store bought chips if you prefer)
- 4 Flour Tortilla (I used 'Costco' uncooked flour Tortilla)
- 1 tbsp Olive oil
Nachos:
- Tortilla Chips
- 1/3 cup Refried Beans
- 1/2 Onion
- 1 Tomato
- 1 Corn
- 1 Avocado
- 1/2 Lemon juiced
- 1/4 cup Sour cream
- 1/4 cup Salsa optionally
Refried beans Recipe
- Soak 1/3 Cup black beans for at least 8 hrs. Drain water.
- In Instant Pot add soaked Black beans, water enough to cover beans, little salt, 1/4 tsp Chilli powder, 1/4 tsp Cumin Powder .Mix.
- Pressure cook , high pressure mode for 20 minutes. Pressure Valve in sealed position. Once cooking is done, wait 10 minutes and release pressure manually. Press Cancel button.
- Drain water from beans and reserve this water. Add beans to pot again. Keep about 1/4 cup beans aside.
- Add some reserved bean water to pot of Beans. Press Saute button. Bring it to boil. Keep Mashing beans with Potato Masher. Cook till mixture thickened. Pressure Cancel button. Keep this mixture aside.
- Alternatively you can use boiled Beans and skip mashing part. Or you can also use canned re fried beans.
- I have soaked more Beans and frozen some for later use. I always keep some frozen beans to save time for my next Bean recipe.
Baked Tortilla Chips
- Take about 4 Tortillas.These are about 8 inch in size. Brush oil on both sides with Pastry Brush.
- Cut each Tortilla into 8 triangles.
- Layer em in a single layer on a Sheet pan or any baking pan.
- Bake at 350 for 15-20 minutes. Flip once in between. Bake till chips are browned. Keep em aside.
- Alternatively you can use store bought Tortilla chips.
- While chips are baking, chop 1/2 onion, 1Tomato into small cubes.
- Chop 1 Avocodo into small cubes. Squeeze 1/2 lemon juice on it and toss.
- Take 11 corn and separate kernels with a knife. You can also use frozen bag of corn.Use about 1/4 cup or more if you like.
- You can also use black olives, Jalapeños for some spice kick or pickled Jalapeños.I use what I have on hand today.
Layer Nachos-
- First place Tortilla chips in single layer.
- Top with Corn, Re fried beans, reserved whole beans. Optionally chopped Jalapenos.
- Top with shredded Mexican cheese blend. I used approximately 1/2 cup cheese. Use more or less according to your preference. More cheese is always better :-)
- Bake 400 F for 6-8 minutes or till cheese melts.
- Top it with chopped onions, Tomatoes, Avocodos.
- Top it with Sour cream. I do not have it so skipped it.
- Optionally add Salsa. It gave extra flavor and I loved it topped with Salsa.
- Serve warm.
Tips:
- Use more or less Veggies to top Nachos as per your preference.
