Badam Katli /Almond Katli

Almond flour is a staple at my home. I use it to add to my Kid’s Oat meal for some extra protein, add to Indian curry gravies where it calls for Cashew paste, and to make quick Badam Halwa (Almond Halwa) as Naivedyam (Offerings to God). You can also use it in smoothies, Kheer to make it yummier, to the Ras for Rasmalai. Now coming to short, sweet recipe Almond Katli is a family favorite. It's a quick recipe with 2 ingredients.Try this for parties, festivals. It's easy to make it in bulk.

Ingredients(I use US standard measuring; 1cup=8oz=250ml):
  • 1 Cup Almond Flour  
  • 1/2 Cup Sugar
  • 1/4 Cup water
  • 2-3 tbsp chopped cashews or Almonds optionally
  • 1 tbsp Ghee


Almond Katli Recipe
  1. Take 1/2 cup sugar, 1/4 cup water in a vessel. I used Cast iron Kadai, my most favorite Kitchen utensil. 
  2. Heat on medium flame and boil sugar till it reaches one string consistency. Mix in between. To check, take a drop of Paakam (liquid ) between two fingers and separate fingers , a string should be formed. By this time liquid is hot to the point we can’t hold for long. That’s another indication that Pakam (Chasni) is ready. 
  3. Add 1 cup Almond Flour and mix well. Add chopped Cashew pieces too. 
  4. Mix well. Keep mixing till mixture leaves pan like shown in picture. 
  5. Turn off stove and take mixture on to a greased surface or Parchment Paper . Wait few minutes. I used my Marble board to place dough. I also kept the back side of a steel plate greased with Ghee.
  6. Grease hands with Ghee, knead mixture lightly while its hot/warm to smoothen dough. 
  7. Roll dough with a rolling pin or spread with hands. You can place a parchment paper on top and roll it. I rolled it on the greased steel plate back side.
  8. Cut into desired shape while still warm. 
  9. Let it cool down. 
  10. Once cools down, store it/serve . 
  11. Serve with some Chivda, Chakli chivda, roasted Phool Makhana or your favorite Namkeen to pair with. 


Tips:
If you happen to add the flour before param reaches the right consistency if will be soft. You can roll them in Ladoo shape and they will still be super tasty. :-).
