Mango Strawberry mousse cake: Layers of deliciousness

The silky soft, decadent mousse flavored with fruit is one of my favorite dessert. Mousse is easy to make, probably the quickest recipe. You can make it in bulk for any number of people with little effort. You can pour it in any mold to suit your style of serving. The only problem, every one will come back for more and more ;-). I even had some one who ate 6 cups of em in my party :-). This is my 'go to' dessert during parties or even for lil get togethers. Do try this most delicious recipe at least once. I have Mango mousse recipe on the blog. I'm pretty sure you will fall in love with it.

Using the Mango mousse recipe, I also make a mean Mango mousse cake.It's better than store bought. The whole cake is made of Mango mousse with a thin cake layer at the bottom. Every new year I would make this cake to start the year with something sweet. You can check the Mango mousse cake recipe on the blog. This year, following the same tradition, I wanted to took it up a notch so I added another layer of strawberry flavored mousse. I also added fresh strawberries to the recipe. Imagine digging into the delicate layer of mousse which would melt in mouth and this cake would double that experience with 2 mousse layers. I wanted to add more flavors, may be next time. 

The Mango and strawberry mousse cake is by far the most delicious dessert I have ever tasted. The cake has a bottom layer of chocolate cake, with the middle layer consists of Mango mousse and finally top layer of Strawberry mousse. The strawberry mousse layer also has fresh strawberries inside. So it's a cake with scrumptious mousse flavors embedded in each layer. The chocolate layer is optional here. You could skip it and do only mousse layers.

To make mango mousse I have used Canned Mango pulp.Even though I'm not a big fan of canned foods, Mango pulp is different. Since the mangoes available here are not sweet like indian mangoes and the flavor is not that good, I prefer pulp.In case you have fresh, sweet mangoes you can use em instead.Also the recipe leaves you with left over pulp which you can refrigerate and use to make Mango Lassi, Mango strawberry smoothie or make extra mousse and pour in a container to have later.

The recipe uses Gelatin.If you like a vegetarian option, you can try using Agar Agar powder. Replace one pack of gelatin with one tablespoon Agar Agar. I have never tried Agar Agar though. So I would suggest you using it in Mango mousse recipe first before making cake.

I used a springform pan for this recipe.The sides of springform pan comes off so it is perfect for making mousse cake or for that matter any cake.You can find em in stores that sell baking pans or online.

In this recipe, I gave step by step instructions but as I was busy with cooking several things, I couldn't click pictures.You could check the Pan I used and method to make mousse from Mango mousse cake recipe.

Total time:
4 hrs (Including refrigeration and waiting time)

Ingredients:
  • 1 can Kesar Mango Pulp (Bought from Indian store)
  • 1 pk Knox unflavored gelatin
  • 3 cups Heavy whipping cream
  • 1 pk. Jello Strawberry
  • Fresh Strawberries
  • 1 box Chocolate cake mix (Store bought)
  • Water
  • 4 tbsp Sugar or adjust

Utensils:
  • 9 inch round Springform PanAmazon Button (via NiftyButtons.com)
  • Electric hand mixer or whisk
  • Parchment Paper optionally but recommended 
  • Silicone spatula

Mango Strawberry mousse cake Step wise recipe


Chocolate cake layer: Check Mango mousse cake recipe for pictures.
  1. For this layer I have used store bought cake mix.This step is optional.
  2. Rub oil around springform pan. 
  3. Cut and Place a parchment paper in the bottom of the pan.It makes it easy to remove cake when done.
  4. Follow directions on cake box and make cake batter. We need only about 1/3 rd cake mix. 
  5. Pour a thin layer of batter, about 1.5 inch deep, in oil rubbed springform pan. You can use left over batter to make another cake.
  6. Bake till cake is done. You can check it by pricking cake in the middle with a tooth pick and it comes out clean.It will take less time for the cake to be done as we are using little batter and pouring  thin layer. It took me between 10-15 minutes.
  7. When the cake is done remove from oven.
  8. Wait 10 minutes. Release sides of  springform pan, remove cake on to a board.Cut the part of cake which raised like a dome.Now the cake will be flat.  You can also discard Parchment paper at this point.
  9. Place cake back in 
  10. Once the cake is at room temperature refrigerate until you are ready to top it with mousse.

Mango layer-2nd layer
  1. Chill the whisk and mixing bowls before starting the process.
  2. Take 1.5 cup whipping cream in a mixing bowl. Whip it using electric mixer until whipping cream forms soft peaks.
  3. Open the can of mango pulp and transfer about 3/4th of a can pulp (525 ml approx.) to the above mixing bowl. 
  4. Add 3-4 tbsp sugar to the bowl based on how much sweet you like the dessert to be.
  5. Gently fold everything  into whip cream using a silicone spatula until it mixed well. 
  6. Resist your urge to eat it as it is :-). 
  7. Taste and adjust sugar if you need more.
  8. Dissolve one pack of gelatin in 3/4th cup water. Heat it in microwave for 45 sec. stir till you see gelatin dissolved. Let the mixture cool down lil bit.
  9. Add to mango pulp cream mixture.
  10. Mix gently with spatula.
  11. Pour the mango mousse on top of chocolate cake.If you are not doing cake layer, you will pour Mango mousse directly in the springform pan.
  12. Set the mousse for 1 hr in refrigerator.
  13. Now it's time to make Strawberry mousse.

Strawberry Mousse layer: 
  1. Keep mixing bowl and whisks in refrigerator. 
  2. Chop fresh Strawberries-Cut each strawberry into 8 pieces. We need about 1 Cup of em.
  3. Add 1 tbsp sugar to the berries. Keep aside
  4. Take 1.5 cup of Heavy whipping cream in a mixing bowl. Add 2 tbsp sugar.
  5.  Beat cream till soft peaks form.
  6. Add Starwberry gelatin to half cup water. Heat water in microwave for 30 sec. Mix till gelatin dissolves. 
  7. Add 4-5 ice cubes to the gelatin to cool down.
  8. Add gelatin, strawberries  to whip cream. Gently mix.
  9. Take cake out of refrigerator.
  10. Then pour this strawberry mousse on top of Mango mousse layer.
  11. Set for 2 hrs or more until mousse sets firmly. 
  12. Decorate the top of the cake with fruits of your choice. Strawberries, mango slices, Kiwi fruit etc.
  13. Serve the elegant cake and get loads of appreciation.
