Stuffed Shishito Peppers :

A visit to 'Sprouts' store last week helped me to acquire fresh Shishito Peppers. Shishito peppers are non spicy variety of Peppers. May be 1 or 2 in a bag will be spicy. These are great for roasting or stuffing. You can simply sauté/bake em in olive oil with Salt n pepper and have as a side.I like to have these with Rice or Roti along with Dhal. This time, I planned to stuff em and chose a simple stuffing. My Aunt makes these with Regular chillies in India. But they are little spicy for my palette and I hate removing the seeds job. Thought of using this recipe with these Peppers today and it turned out yum and I ended up making it twice in a week. 

If these Peppers aren’t available, you can use Jalapeños or any milder variety. Remove seeds to lessen spice or keep if you are game for it. You can also use Anaheim chili peppers.since they are huge, you will need more stuffing and more time to cook. You can also try my Stuffed Anaheim Chili(Bajji chillies) recipe.

And we might not realize but chillies/Peppers are nutritious. They are rich with Vitamin A and C. Also they contain capsaicin, a substance which is known to control pain. Chillies aid in digestion. It has several other health benefits. 

Serve these chillies on the side with Rice or Roti and Dhal. It would make a great meal. It serves as a side dish with Biryani or Pulao Rice too.

Ingredients 
  • 20 Shishito Peppers or any mild variety Peppers
  • 1/2 cup Gram flour (Senagapindi/Besan)
  • 1.5 tbsp Chilli powder 
  • 1 tsp salt or adjust 
  • 1/4 tsp Amchur (Dried mango powder)
  • 1/4 tsp Turmeric 
Stuffed Shishito Peppers Recipe
  1. Clean and slit the chillies in the middle keeping ends intact. . I used Shishito Peppers from Sprouts store. These are non spicy. You can also use Anaheim chillies or if you like spicy, use Jalapeños by removing seeds. In case of Anaheim chillies, you can half or quarter them as they are big. 
  2. Mix all above ingredients from the list, in a bowl.
  3. Add water to make a thick paste.
  4. Stuff the chillies with the masala.You can use a ziplock bag to do this.Dump the stuffing in Ziploc bag, Cut a hole at one corner.squeeze out by holding the bag tightly.I just used my hands to do this:-). 
  5. Heat a wide fry pan and add 2 tbsp oil or less.
  6. Layer chillies in a single layer.
  7. On a slow flame roast chillies till they are cooked. 
  8. Flip in between. You can cover pan optionally to fasten cooking.
  9. Serve with Rice or Roti along with Dhal to have a delectable meal.

Tips :
If you don't want to stuff and an easy way to enjoy these peppers, chop em into big pieces, roast peppers in pan and add the dry mixture and cook till Besan is removed of raw smell.Sprinkle water if needed.
