Aloo Palak Paratha

Another recipe for my lunchbox series.Paratha is one of my Fav to pack in lunchbox. Coz you can add anything to the dough and Kids won’t complain.It’s mess free for kids to eat. Aloo Palak Paratha is very easy to make as the veggies are both mixed in flour.Since the stuffing is already in the dough it’s easy to roll em.I have added chill powder to the dough to spice it up.You can also add coriander powder, chat masala or any flavors you like. I also suggest adding Ajwain seeds (Vamu) which gives a nice taste.You can also serve these Parathas with Kadhi. When you pack em for lunch box pack some protein on the side like hard boiled Egg or string cheese.

Not only for Kids lunch box they are perfect for adult lunch box.Also they are great grab and go breakfast.They would taste great with pickle on the side or spread on chapati.

So make these Easy and healthy Parathas for your Kid’s or adult lunch box next time. Or make hot n fresh Parathas for dinner.

Ingredients: (I use US standard measuring; 1cup=8oz=250ml)
1 cup Wheat flour
1 medium size boiled potato
1 cup Spinach finely chopped
1 tablespoon oil
1 tablespoon grated ginger
1 tsp chilli powder or adjust
Salt



Aloo Palak Paratha step-by-step Recipe 



  1. Wash and prick potato with fork in several places.Boil the potato in microwave covered for 5 minutes.The potato should be completely soft.poke with a fork to see it's cooked thru.if not,cook for couple more minutes.
  2. Mix all ingredients together in a wide bowl. Mash potato with hands and mix into the dough nicely.
  3. Mix all above list of ingredients nicely. Now add enough water to make a soft Dough like regular Chapathi dough.
  4. Rest the dough for at least 30 minutes.
  5. Now take a ball of dough and dust it with some flour.
  6. Roll it into a circle or any possible shape😊.
  7. Heat a griddle or pan and place rolled circle on the pan.
  8. Cook for 30 sec and flip it. Top it with oil. Use pastry brush to spread.
  9. Flip again and top with oil.
  10. Cook both sides till brown spots appear.
  11. Serve with curry or with a pickle on the side.Also Kadhi is a good choice.
  12. Kids can eat em as it is or pack em for lunch box.

Tips: 

  • You can add spices to the flour like coriander powder, ajwain( Vamu), garam masala.
  • Make the dough night before. Store tightly covered.It will save time in the morning for lunch box packing.
