Cracked Wheat Pulihora (With LemonJuice)

Cracked wheat is a healthy alternative to eating white rice. Cracked wheat is nothing but crushed whole wheat berries. So it contains the goodness of outer bran layer and germ of a wheat berry.All the nutrients are still intact in cracked wheat.

Cracked wheat Pulihora recipe is made using lemon juice and regular Pulihora seasonings. The chewy cracked wheat with crunchy seasonings and sour lemon dressing makes this dish simply delicious. It is not a one pot meal but definately a one bowl meal😉 since it can be had as it is.You can make various other recipes using cracked wheat. I have few cracked wheat recipes on this blog. Cracked wheat is really good for Kids too.I particularly love to make my toddler lots of cracked wheat recipes so he wouldn't be bored with eating rice everyday.One such recipe I haven't posted yet is cracked wheat kichidi, his favorite.

They are various sizes of cracked wheat available in market, Fine-coarse. Choose the one you like the best.For this recipe I used large no#1 variety bought from Indian store.Cracked wheat needs to be cooked like Rice. You can pressure cook for faster cooking using 1 cracked wheat to 2 water ratio. This recipe can be had for any meal and also a great lunchbox item. 

You can use lime or lemon for the dish. I use whichever I have on hand and today I used limes.the limes were juicy and gave good amount of juice and I used 1.5 limes for the recipe.Make sure to add lime/lemon juice gradually to ensure sourness.

Ingredients: (I use US standard measuring; 1cup=8oz=250ml)

  • 1 cup Cracked Wheat (Large no#1 Variety from Indian store)
  • 1.5 lime juice or Lemon juice
  • 2 Tablespoons oil
  • Salt to taste
  • 3 green chillies
  • 3 tbsp Peanuts
  • 1 tbsp Chana dal (Senagapappu)
  • 1 tbsp Whole Urad/Minapagundlu (no skin)
  • 1/2 tsp mustard seeds (Aavalu)
  • 1/2 tsp Cumin seeds (Jilakara)
  • Curry leaves
  • Turmeric
  • 2 red chillies




Cracked Wheat Pulihora step-by-step Recipe 

  1. Pressure cook 1 cup cracked wheat with 2 cups water, salt to taste for 3 whistles.
  2. While it's cooking juice 1 and 1/2 lemons and keep aside. You can use more if you want more sourness. 
  3. Chop 3 green chillies lengthwise and keep aside.
  4. Open the cooker when pressure is gone, transfer cooked cracked wheat to a wide mixing bowl.
  5. Let it cool down. Mix in between to make it cold faster. If you feel it's sticky you can add a teaspoon oil to keep grains separate. 
  6. Meanwhile prepare seasoning- heat pan and take 2 tbsp oil.
  7. Add mustard and Cumin seeds. When they splutter add curry leaves. When leaves are fried add peanuts, let em turn little color, add dals.
  8. Let dals brown and add chillies. Fry for a minute and turn off stove.
  9. Add turmeric. Keep it aside.
  10. To the cracked wheat bowl add lemon juice and 1 teaspoon oil. Gently mix with fingers to coat well.Add lemon juice gradually and check sourness. 
  11. Transfer seasoning to cracked wheat bowl. 
  12. Mix properly. Taste it to check salt.
  13. Serve as it is for lunch or dinner.


Tips: 

  • Adjust sourness according to your preference. 
  • Adjust chillies according to your preference.
